Ground beef wrap: the 15-minute recipe
Publié le (mis à jour le )
A ground meat wrap can be prepared in 15 minutes: brown ground beef with an onion and spices, then roll it in a large wheat tortilla with lettuce, tomato and a yogurt sauce. It can be eaten hot or cold, making it a convenient lunch to take on the go.
Here is the recipe for 4 wraps, the filling that stays in without leaking, the proper rolling technique and what distinguishes a wrap from tacos and a burrito. The meat can also be freshly ground with a meat grinder.
Ground meat wrap recipe
Here are the ingredients for 4 wraps, including the filling and yogurt sauce, then the preparation steps to follow in order to assemble them.
Ingredients for 4 wraps
- 400 g of 15% fat ground beef
- 4 large wheat tortillas (25 to 30 cm)
- 1 onion and 1 clove of garlic
- 1 tablespoon of oil
- 1 teaspoon of mild paprika, 1/2 teaspoon of cumin, salt and pepper
- For the filling: lettuce, 2 tomatoes, 1/2 cucumber, 1 red onion
- For the sauce: 1 Greek yogurt, 1 teaspoon of lemon juice, 1 pinch of salt, 1 tablespoon of chopped mint or parsley
Steps
- Mix the yogurt, lemon, salt and herbs for the sauce.
- Brown the chopped onion for 3 minutes in hot oil.
- Add the meat and garlic, then crumble it for 6 to 7 minutes, until it is no longer pink.
- Remove excess fat, add the spices and let cool for 2 minutes.
- Reheat the tortillas for 15 seconds per side to soften them.
- Fill, roll and cut diagonally in half.
The same meat and spice mixture can also be used as a filling for a crispy ground meat brick.
What meat for a wrap?
Chicken, ground beef and turkey are the most common. 15% fat ground beef remains tender and absorbs spices well. For a cold wrap, let the meat cool before filling, otherwise the steam will soften the tortilla and wilt the lettuce.
What is the filling of a wrap with ground meat?

The classic filling combines the spiced meat with fresh raw vegetables and a creamy sauce. The most common combinations:
- lettuce, tomato, cucumber and red onion;
- corn, grated carrots and cheddar;
- grilled peppers and fresh cheese;
- hummus, parsley and lemon sauce;
- yogurt-mint sauce, harissa or white sauce depending on taste.
Avoid ingredients that are too wet, which soften the tortilla. Hummus and yogurt-herb sauce can be prepared in a few pulses with a bowl chopper: see the electric chopper collection, convenient for preparing all the filling in a few minutes.
How to roll a wrap that does not open

A well-rolled wrap depends on a few simple steps. Here they are in order, from the reheated tortilla to the pan-searing that seals the seam.
- Reheat the tortilla: cold, it cracks. Heated, it becomes flexible.
- Fill in the center, in a strip: leave 4 cm free on the edges and at the top.
- Fold the sides over the filling before rolling tightly.
- Do not overfill: 100 g of meat and a handful of raw vegetables are enough for a 25 cm tortilla.
- Brown the closed wrap, seam underneath, for 1 minute in the pan to seal it.
For juicier meat, grind a piece of chuck yourself just before cooking: the appliances in the meat grinder collection do it in a few seconds.
Wrap, tacos, burrito: the difference
This table distinguishes the wrap, tacos and burrito according to the tortilla used, the way it is served and the temperature. It shows at a glance what makes the wrap unique.
| Preparation | Tortilla | Service | Temperature |
|---|---|---|---|
| Wrap | Large wheat tortilla | Rolled tightly, cut in half | Hot or cold |
| Mexican tacos | Small corn or wheat tortilla | Folded in half, filled at the table | Hot |
| Burrito | Large wheat tortilla | Closed on the sides, well filled | Hot |
The wrap is the only one of the three that can also be eaten cold, hence its popularity for lunches to take on the go. The meat from this wrap also works in ground meat tacos: you just need to adjust the size of the tortilla. For a heartier meal, the ground meat burrito adds rice and red beans.
What is the difference between a tortilla and a wrap?
The tortilla is the Mexican-origin corn or wheat flatbread. The wrap is the preparation rolled in a large wheat tortilla. In stores, the word "wrap" often refers to the tortilla itself, larger and more flexible than that of tacos.
