Ground meat cooking time: frying pan, oven and casserole
Publié le (mis à jour le )
Ground meat cooking time depends mainly on the cooking method and thickness. When crumbled in a pan, it cooks in 8 to 10 minutes; a 2 cm ground meat steak takes 3 to 4 minutes per side, meatballs take 15 to 20 minutes in the oven at 200 °C, and a meat sauce simmers for at least 30 minutes in a casserole. In all cases, ground meat must be cooked more thoroughly than a whole cut, and cooked through for children and vulnerable people.
This guide brings together the cooking times for beef, veal, lamb, and poultry, and explains how to monitor cooking without making mistakes.

Ground meat cooking time chart
These times apply to a well-preheated pan or oven. Always rely on the appearance of the meat and, even better, on a thermometer.
| Preparation | Method and heat | Estimated time | Cooking indicator |
|---|---|---|---|
| Crumbled ground meat | Pan, medium to high heat | 8 to 10 min | No more pink traces |
| 1 cm ground meat steak | Well-heated pan | 2 min per side | Clear juices for medium cooking |
| 2 cm ground meat steak | Well-heated pan | 3 to 4 min per side | Cook longer for meat cooked through |
| 3 to 4 cm meatballs or keftas | Pan, medium heat | 8 to 10 min, rolling them | Brown center, no pink |
| 3 to 4 cm meatballs | Oven at 200 °C | 15 to 20 min | Turned over halfway through cooking |
| Shepherd's pie, stuffed vegetables | Oven at 180 to 200 °C | 20 to 30 min, meat already browned | Golden top, well-hot center |
| Meat tomato sauce | Casserole, low heat, covered | 30 min minimum | Reduced sauce, tender meat |
| Meatballs in sauce | Casserole, simmering sauce | 20 to 25 min after browning | Cooked center, coating sauce |
The cooking times for ground meat in the oven, by thickness, including frozen, are detailed in our guide ground meat in the oven: times and cooking.
In the pan: crumbled meat, ground meat steak, and meatballs
In the pan, the cooking time changes depending on the shape of the ground meat. Here are the guidelines for crumbled meat, ground meat steak, and meatballs, with the techniques that prevent it from boiling.
Crumbled ground meat
Place the meat in a single layer in a wide and well-heated pan, with a drizzle of oil. Let it brown for one to two minutes without touching it before crumbling it with a spatula: it is this contact that makes it brown instead of boiling. Allow 8 to 10 minutes in total, and cook in two batches if the pan is too full, otherwise the meat will release water.
Ground meat steak by thickness
Thickness matters more than weight: 2 minutes per side for a 1 cm patty, 3 to 4 minutes for a 2 cm steak. Turn it over only once and never press it with a spatula, otherwise the juices will escape. Meatballs and lamb keftas are cooked over medium heat, rolled regularly for 8 to 10 minutes. To shape your own patties, follow our method for making homemade ground meat steak.
In the oven and casserole: meatballs, gratins, and slow-cooked dishes
The oven is the easiest option when there are many people at the table. Meatballs of 3 to 4 cm, placed on a tray without touching each other, cook in 15 to 20 minutes at 200 °C, turned over halfway through cooking. For shepherd's pie or stuffed vegetables, brown the meat first: the 20 to 30 minutes in the oven are used to brown the top and heat the whole thing through to the center. For a ground meat steak, the times by thickness are in our guide to ground meat in the oven.
Slow-cooked dishes in a casserole
In a casserole, the meat must, on the contrary, cook for a long time to flavor the sauce:
- Brown it over high heat.
- Add the onion, tomatoes, and spices.
- Let it simmer covered and over low heat for at least 30 minutes, up to 1 h 30 for a more concentrated sauce.
Already browned meatballs finish cooking in 20 to 25 minutes in a sauce that simmers without boiling.
Can you cook ground meat that is still frozen?
It all depends on the shape in which the meat was frozen.
A frozen ground meat steak can be cooked directly in the oven, by extending the time by about one third. For crumbled meat or meatballs, it is better to defrost them in the refrigerator the day before: a frozen block cooks unevenly, with a center that remains cold.
Cooking ground meat through: the safety rule

On a whole cut, bacteria remain on the surface and searing is enough to eliminate them. Grinding distributes them throughout the mass: ground meat is therefore not treated like a ribeye steak. French health authorities recommend cooking it through, without any pink part, for sensitive groups:
- young children;
- elderly people;
- pregnant women;
- immunocompromised people.
The generally cited guideline is a temperature of at least 70 °C at the center of the cut. Ground poultry, chicken or turkey, is always served well cooked: white and opaque meat, perfectly clear juices. For beef, veal, and lamb served to healthy adults, a medium-cooked steak remains common if the meat is very fresh. Storage time in the refrigerator and freezing are detailed in our article on the storage of ground meat.
How to tell if ground meat is cooked without a thermometer?
Without a thermometer, it is the appearance of the center that tells.
Cut the thickest piece in the center: for cooking through, the meat must be brown from one side to the other and the juices clear, without a pink tint. For crumbled meat, no piece must remain red. In case of doubt, extend the cooking time by one minute.
Homemade ground meat: what changes during cooking
Grinding the meat yourself rules two parameters of cooking:
- The fat content: fattier meat remains tender even well cooked, very lean meat dries out quickly.
- The grain: a fine screen gives a tight texture that holds well in meatballs and keftas, a wider screen a more airy steak and crumbled meat that keeps its texture in sauce.
You also know which cut went through the screen, and when: ground meat just before cooking is exposed to room temperature for less time. To choose between manual and electric depending on your quantities, browse our meat grinder collection.
What cooking time to choose for your ground meat?
Three guidelines are enough: 8 to 10 minutes for crumbled meat in a pan, 3 to 4 minutes per side for a 2 cm steak, at least 30 minutes for a slow-cooked dish. For children, elderly people, and poultry, always aim for cooking through, without any pink part.
To master both fat, grain, and freshness, we recommend grinding it yourself with the 750 W electric meat grinder: its 3, 5, and 7 mm screens cover meatballs as well as steaks, and the meat goes directly from the screen to the pan. The other models are gathered in our collection of electric meat grinders.
