What meat is best for a successful hachis parmentier?
Publié le (mis à jour le )
For a really tasty shepherd's pie, the answer is consistent among cooks: a piece of braised beef, gelatinous and peppered, rather than standard lean ground beef. Paleron, macreuse, jarret or beef tail, and of course the leftovers from pot-au-feu that made the dish legendary. This guide compares the cuts that make the best shepherd's pies, explains why braised beef beats ground steak in this particular dish, and gives the method for mincing the meat to the right texture, neither purée nor cubes.

What meat for a shepherd's pie: a comparison of cuts
This comparison reviews the possible cuts for a shepherd's pie, with their character, the preparation required and our verdict. Choose according to the time you have.
| Cut | Character | Preparation | Verdict |
|---|---|---|---|
| Pot-au-feu leftovers | Melting, flavored by the broth | Shred or coarsely mince | The historic shepherd's pie, unbeatable |
| Braised paleron | Gelatinous, deep flavor | Braise for 2 hours 30 minutes then mince | The best value for money |
| Macreuse or jarret | Fibrous, very tasty | Braise then coarsely mince | Excellent, takes time |
| Fresh ground beef 15-20% | Fast, consistent | Brown with onions and stock | Very good express shepherd's pie |
| Confit duck or lamb | Rich, festive | Shred the confit, braise the lamb | The Sunday variants |
The rule that stands out: shepherd's pie is a second-cooking dish. Meat already cooked slowly, then minced and browned with onions, gives that soft chew that makes a real shepherd's pie. The express raw ground beef remains honorable on a weeknight, provided you choose it at 15 or 20% fat and moisten it with a veal stock.
The classic version: braised then minced beef
Grandmothers' shepherd's pie was born the day after pot-au-feu: the meat cooked in broth, shredded or passed through the mincer on a large grid, browned with a melted onion, moistened with a ladle of broth, then covered with purée and gratinéed. This logic remains the best:
- Braise a paleron for two and a half hours with carrots, a skewered onion and a bouquet garni.
- Let it cool in the juice, then mince it with the largest grid of your mincer, or with a knife for purists: the goal is short strands of meat that retain their chew, not a paste.
- Recover the reduced braising juice to bind the meat and add a persillade at the last moment if you wish.
- Salt, pepper generously and taste: the layer of meat must be tasty on its own, because the purée softens everything.
The whole assembly method and the variants are in our homemade shepherd's pie recipe.
The express version with fresh ground beef: the good settings
On a weeknight, raw ground beef makes a very decent shepherd's pie in forty minutes. Three settings raise it to Sunday level:
- The cut: paleron or shoulder minced on demand, at 15 or 20% fat, rather than lean ground beef that dries out under the grill.
- The cooking: melt two onions before adding the meat, sear on high heat without stirring too much, then moisten with half a glass of veal stock or broth and let reduce for five minutes.
- The seasoning, where everything is played: salt, pepper, a pinch of nutmeg on the purée side, and on the meat side a dash of tomato paste that enhances the roasted flavor without being noticed.
The ideal ratio remains one-third meat for two-thirds purée by volume, i.e. about 500 grams of ground beef for a dish of four to five people. It is the format around which our article what to do with 500 g of ground beef develops its recipes. And if the gratin waits until the next day, assemble it the day before without the cheese: it will only be better.
Mincing for shepherd's pie: the texture that changes the dish

Shepherd's pie forgives a lot, except for the bad texture: meat mixed into a purée makes a pasty dish, pieces too large escape the fork. The right window is coarse mincing, which leaves identifiable strands under the purée: the 7 mm grid of our meat mincers, or the knife. This is what a grid mincer produces, on braised meat as on raw meat, where a blade robot chops irregularly and heats the meat.
For the still warm braised meat, a crank model is more than enough: the cooked meat minces almost effortlessly and the device disassembles into a few pieces for cleaning. The devices in our collection of manual meat mincers do this work without an electrical outlet, with interchangeable grids to choose the texture.
Can you prepare shepherd's pie in advance?
Shepherd's pie is one of the dishes that benefit from waiting a little.
It is even recommended: assembled the day before and kept in the refrigerator, it holds up better at serving and the flavors blend. Add the cheese and gratiné at the moment, 25 to 30 minutes at 190 °C starting from cold. It also freezes very well in portions.
Shepherd's pie is won with the choice of cut
Remember the hierarchy: pot-au-feu from the day before first, braised paleron next, fresh and fatty ground beef during the week. In all three cases, a coarse mincing and a strong seasoning of the meat layer make the difference between a decent shepherd's pie and the one you ask for again.
To mince yourself the braised paleron or the ground beef of the day to the right size, our collection of meat mincers brings together manual and electric models with interchangeable grids.
