Ground beef pasta bake: crème fraîche or béchamel
Publié le (mis à jour le )
A successful pasta bake with ground meat depends on three decisions made before you even turn on the oven: the binder you choose, the pasta cooking time, and how you brown the meat. Béchamel makes the most stable version, crème fraîche the quickest, and tomato sauce the lightest.
Cook the pasta 2 minutes less than the time indicated on the package because it finishes cooking in the oven, and brown the meat over high heat in a single layer instead of boiling in its own juices. Allow 400 g of dry pasta and 500 g of meat for 4 people, then 20 to 25 minutes at 200 °C. Here are the details, sauce by sauce.

Crème fraîche, béchamel or tomato: which binder for a pasta bake with ground meat
Three binders are possible, and a fourth combines them.
Béchamel is made with 40 g of butter, 40 g of flour and 50 cl of milk: cook the roux for 2 minutes without browning, pour the lukewarm milk in three times while whisking, then let the sauce thicken for 5 to 8 minutes. The starch from the flour stabilizes the whole thing: the sauce will not split, it won't release water and will still coat the pasta after 25 minutes in the oven.
The crème fraîche version is twice as fast: 20 cl of full-fat cream with 30% fat content, a grating of nutmeg, five minutes of preparation. The pitfall is prolonged boiling, which can cause the sauce to split: the fat separates and the pasta bake comes out grainy. Add it off the heat, over the still-hot meat. A reduced-fat cream with 15% fat splits much more easily: keep the full-fat version.
The tomato sauce version remains the lightest: 400 g of pulp reduced for 15 to 20 minutes, without milk or butter. It adds acidity, but browns less well for lack of fat on the surface. Layering the two, tomato on the bottom and béchamel on top, gives the most generous version. This is also the principle of ground meat cannelloni, cooked between a layer of tomato sauce and a béchamel.
| Binder | Preparation time | Performance in the oven | For whom |
|---|---|---|---|
| Béchamel (40 g butter, 40 g flour, 50 cl milk) | 10 to 12 min | Excellent, does not split after 25 min | Rich and enveloping, for a Sunday pasta bake |
| 30% full-fat crème fraîche | 5 min | Decent, splits if it has boiled | Very rich, for a 30-min weekday dinner |
| Tomato sauce (400 g pulp) | 15 to 20 min | Good, but browns little for lack of fat | Light and tangy, for children and small appetites |
| Layered tomato and béchamel | 25 to 30 min | Optimal, structured in layers | The most generous, for a single dish for 6 people |
The same trade-off applies whenever a vegetable is added to the dish: for a ground meat eggplant bake, béchamel absorbs the water released by the vegetable, whereas cream alone would make the bottom of the dish soggy.
Which pasta to choose and why cook it 2 minutes less
Hollow shapes hold the sauce, because they trap the meat and béchamel in their central channel:
- macaroni and macaroni tubes ;
- penne rigate ;
- rigatoni and tortiglioni.
Long and flat shapes clump together in the oven. Ribbed surfaces add grip compared to smooth pasta.
The cooking rule is simple: if the package says 11 minutes, drain at 9. Pasta absorbs another 15 to 20% of liquid in the oven, and pasta cooked to perfection before baking will come out soft. Do not rinse it, the surface starch helps the sauce stick. Reserve 10 cl of cooking water to thin the sauce, and mix immediately after draining.
Regarding quantities, allow 100 g of dry pasta and 125 g of meat per person, or 400 g and 500 g for four. This is the most common purchase size, and it opens up many other menus: here is what to do with 500 g of ground meat depending on the time you have. For other dishes, see the quantity of ground meat per person dish by dish.
Brown the ground meat over high heat so it browns instead of boiling

Ground meat releases water. In a pan that is too crowded or not hot enough, the contact temperature drops below 100 °C, the water no longer evaporates and the meat simmers, grey, in its juices. The Maillard reaction, which produces grilled aromas, only starts around 140 °C. So heat the pan empty for 2 minutes, spread the meat in a single layer and do not touch it for 2 minutes: it must brown before being broken up with a spoon. For 500 g in a 28 cm pan, proceed in two batches.
The fat content matters as much as the temperature. At 5% fat, the meat dries out in the oven; at 15%, it remains tender after 25 minutes of baking. Grinding it yourself gives you control over this point, by choosing the cut, chuck or top round, and a texture much less compact than industrial ground meat. This is the first benefit of a meat grinder. Salt after browning, because salt applied too early draws out the water, then add the finely chopped onion and let it sweat for 3 to 4 minutes.
Assemble the dish and bake for 20 to 25 minutes at 200 °C
For the tomato variant, sauté 2 finely chopped garlic cloves for 30 seconds before adding the pulp: in pieces that are too large, the garlic burns and becomes bitter. A garlic press or garlic grinder gives a uniform size, and therefore even cooking.
The assembly is done in four steps:
- Butter a 30 x 20 cm dish.
- Mix the pasta, meat and two-thirds of the sauce in a bowl, then pour into the dish.
- Top with the remaining third, to a thickness of 5 to 6 cm: a dish that is too large spreads the preparation to 2 cm and dries it out.
- Bake at 200 °C with fan heating for 20 to 25 minutes, until the edges are vigorously bubbling.
The cheese is grated at the last moment, on top: 60 to 80 g of aged comté for flavor, emmental for stretch. Industrial grated cheese contains an anti-caking agent that hinders even melting. If the surface remains pale, place under the grill for 3 to 5 minutes. Then let it rest for 5 minutes before serving: the sauce sets, and the portions can be cut instead of collapsing.
Why does my pasta bake come out dry from the oven?
A dry pasta bake rarely comes from the oven itself.
Three causes recur, in order of frequency: pasta cooked for the full time before baking, meat with 5% fat, or an insufficient volume of sauce. Allow at least 50 cl of liquid for 400 g of pasta, and cover with aluminum foil for the first 15 minutes if your oven heats strongly from above.
The pasta bake that holds together with a spoon
Three guidelines are enough: pasta taken out 2 minutes before the end of the indicated time, meat browned in a single layer in a very hot pan, and 20 to 25 minutes at 200 °C under cheese grated at the last moment. Béchamel remains the safest binder; full-fat cream can save the day in five minutes, provided it is not allowed to boil.
