Ground meat-stuffed zucchini: the baked recipe

Publié le (mis à jour le )

Stuffed zucchini with ground meat is easy to master with three simple guidelines: firm, medium-sized zucchini, a filling with at least 15% fat, and 40 minutes of baking at 180 degrees. Everything else is just a variation. The most common mistake is neither in the seasoning nor in the cooking time: it is a filling that is too lean, which shrinks and leaves the zucchini swimming in its own water. This guide provides the proportions, the method to avoid excess moisture, and the variations that really work, from gratin to round zucchini.

Stuffed zucchini with ground meat: the oven recipe

Choosing the zucchini and the meat

Medium-sized zucchini, between 18 and 22 centimeters, are the easiest to work with: wide enough to hold the filling, firm enough to hold up during cooking. Very large zucchini contain a lot of water and have large seeds; they collapse in the oven. When it comes to meat, the lean-to-fat ratio matters more than the cut itself.

Meat Fat Result in the filling For whom
Beef, chuck 15 to 20% tender, bold flavor the classic version
Veal, shoulder 10 to 15% fine and delicate light filling, to be enriched
Lamb, shoulder 18 to 22% bold, Mediterranean herb and cumin version

Beef chuck remains the benchmark: it provides flavor and enough fat for a tender filling. Veal, which is leaner, is best mixed with beef. The principle of choosing meat to grind applies here just as it does for steak. Ground veal also has its own recipes and steak cooking methods.

Preparing the filling without excess water

Four steps for a dry zucchini filling: hollow out the half zucchini while leaving a half-centimeter wall, sauté the diced flesh for 5 minutes dry in the pan, firm up the meat cubes in the freezer for 15 minutes before grinding it, then mix everything together, 500 g of meat for 8 half zucchini

Cut the zucchini in half lengthwise, hollow out the flesh with a small spoon while leaving a half-centimeter wall. Don't throw anything away: this flesh goes into the filling. Sauté it alone in the pan for five minutes, without fat, until the water has evaporated. This step prevents the bottom of the dish from becoming waterlogged.

Then grind the meat at the last moment, on a medium grid, after having put the cubes in the freezer for fifteen minutes. Cold meat cuts cleanly instead of being crushed, the fat remains in distinct grains, and the filling retains its texture after cooking. The appliances that do this job properly, from manual models to powerful motors, are gathered in our collection of meat grinders.

Mix the ground meat, the drained zucchini flesh, a sautéed onion, a clove of garlic, an egg, two spoons of breadcrumbs, parsley, salt, and pepper. For four medium zucchini, allow 500 grams of meat: this is the amount that fills eight half zucchini without packing them down. Homemade breadcrumbs can be prepared in a few seconds with the grinder, using dry bread.

Should the zucchini be pre-cooked before stuffing?

This question is especially relevant for large sizes. For medium zucchini cooked for 40 minutes, pre-cooking is not mandatory; ten minutes of salting to draw out moisture changes the result significantly. For very large zucchini, five minutes of steaming pre-cooking prevents the wall from still being firm when serving.

Oven cooking, step by step

Here are the oven cooking steps in order, from drawing out moisture from the zucchini boats to the final gratin, with the indicator that shows when the zucchini is cooked.

  1. Preheat the oven to 180 degrees with fan heating.
  2. Lightly salt the inside of the zucchini boats and let them draw out moisture for ten minutes on absorbent paper.
  3. Fill generously, doming the filling: it always settles a little.
  4. Place in a dish with a bottom of half a glass of water or broth, never more, otherwise the zucchini will boil instead of roasting.
  5. Bake for 40 minutes, then add the grated cheese and put back for 10 minutes to brown.

The zucchini is cooked when the tip of a knife passes through the wall without resistance. If the filling browns too quickly, cover with a sheet of aluminum foil for the first twenty minutes.

Gratin, round zucchini, and lasagna: the variations that work

The same filling lends itself to other forms than the classic stuffed zucchini. Here are three variations that work well: the gratin, the round zucchini, and the zucchini lasagna.

  • As a gratin: the zucchini are cut into slices, pre-cooked in the pan, then alternated with the filling and béchamel. Allow 35 minutes at 190 degrees.
  • As a round zucchini: cut off a cap, hollow it out, stuff it, and put the cap back on for the first thirty minutes to retain moisture.
  • As a lasagna: replace the pasta sheets with zucchini strips cut with a mandoline and dry-grilled. The filling remains identical.

In all three cases, preparing the vegetables takes longer than the meat, and a good vegetable grinder significantly reduces this task for the onion, garlic, and parsley.

Can stuffed zucchini be prepared in advance?

Yes, which allows you to prepare everything the day before. Stuffed but uncooked, they can be kept for up to 24 hours in the refrigerator. Beyond that, raw ground meat cannot be kept: the rules are detailed in our guide to the storage of ground meat. Once cooked, they reheat well and can be frozen for two months.

A mastered filling is better than a complicated recipe

Medium-sized zucchini, a filling with at least 15% fat, dry-sautéed flesh, and 40 minutes at 180 degrees: these four guidelines are enough. We recommend grinding the meat yourself just before, because cold meat ground at the last moment retains its texture and juice in the oven. The other stuffed vegetables follow the same logic: the stuffed tomato with ground meat requires, for example, 20 minutes of salting to draw out moisture.
