Mincing meat at home: which method for which result?
Publié le (mis à jour le )
To mince meat at home, three tools do the job: the knife, the grinder plate (manual or electric), and the blade processor. The knife gives the best result, but it requires time and technique. The grinder plate produces a regular mince with clean strands in a few minutes. The blade processor is fast, but it crushes the meat more than it slices it. In all cases, the result depends first on the preparation: very cold meat, cut into cubes. This guide compares the three methods, explains this preparation and gives the right setting according to the recipe, from tartare to steak, including stuffing.

Knife, grinder or processor: what changes on the plate
Each tool gives a different texture. The table summarizes what we get, the time to allow and the ideal use.
| Method | Texture obtained | Time for 500 g | Ideal for |
|---|---|---|---|
| Chef's knife | Irregular strands, perfect chew | 10 to 15 min | Tartare, quick mincing of a nice piece |
| Manual grinder plate | Clean and regular strands | 4 to 6 min | Steaks, meatballs, weekly use |
| Electric screw grinder | Clean strands, continuous output | 1 to 2 min | Families, large volumes, homemade sausages |
| Blade processor | Irregular mincing, paste-like tendency | 1 min | Very fine stuffings, occasional emergency use |
The difference is mechanical: a plate slices the fibers, fast blades tear them and heat them. This is why a steak from a screw grinder holds up during cooking, while the one from the processor collapses.
To choose according to your volumes and frequency, our collection of meat grinders brings together the two families: plate, crank and motor.
Prepare the meat before mincing it
Whatever the method, it all starts with very cold meat. Firm, the flesh slices cleanly instead of being crushed, and the fat does not melt during mincing. It is this detour through the cold that separates a mince with distinct strands from a sticky paste.
- Cut the piece into 2 to 3 centimeter cubes.
- Spread the cubes on a plate and put them in the freezer for 20 to 30 minutes.
- Remove with a knife the thick nerves and silver membranes, which would wrap around the screw or resist the blades.
- Keep the fat: it carries the taste and tenderness, around 15 to 20% for a steak.
The choice of the cut is made at purchase: chuck, shoulder or top round for beef. Our guide for making homemade ground beef details these cuts and their fat content.
Mincing with a knife: the tartare method
Mincing with a knife is the tartare one: a well-sharpened chef's knife, a stable board and a two-step motion. First, slice the piece into thin slices, then into sticks, then into small cubes. Then, mince by rocking the blade over the pile of meat, folding it regularly, until the desired grain size.
Count ten good minutes for 500 grams. For a tartare, the result is worth it: clean pieces, no crushed fiber, intact taste. For regular use, the knife quickly shows its time and regularity limits.
As soon as mincing becomes weekly, the crank takes over. The models in our collection of manual meat grinders slice with the plate, without noise or electrical outlet, and process 500 grams in about five minutes.
Can you mince meat with a hand blender?
It is not recommended. The blender foot is designed for liquids: it crushes raw meat in batches and tires its motor. A grinder bowl used in pulses does better as an emergency, and a grinder plate gives a real mince with clean strands, without effort.
Mincing with a grinder plate, manual or electric

The screw grinder, crank or motor, always works the same way: the screw pushes the cubes towards a knife that turns against a perforated plate. The size of the holes decides the texture:
- 3 mm for a fine stuffing or a preparation for children;
- 5 mm for ground beef and meatballs;
- 7 mm for a more rustic mince, like for a chili or a shepherd's pie.
Introduce the cubes regularly, without forcing with the pusher: the screw does the work. Alternate lean pieces and fatty pieces, the mixture is made by itself and the mince comes out homogeneous. At the end of the session, a blank pass pushes the last strands out of the body.
In manual, fix the device well to the work surface and turn at a constant rhythm. In electric, the same volume passes in about one minute, and the reverse function unblocks the rare jams. After use, disassemble immediately and rinse with very hot water: the still fluid fat leaves in thirty seconds, while an hour later you have to rub every corner. The choice of the plate by recipe is detailed in our guide which plate to choose for a meat grinder.
Should you mince the meat once or twice?
A single pass through the medium plate is enough for steaks and meatballs. A double pass, first through the large plate then through the fine plate, gives a more homogeneous stuffing. It is suitable for fine stuffings, homemade sausages and preparations for children, which require a very regular texture.
What quantity of meat to mince in advance?
Mince the quantity of the meal, no more: the mince oxidizes in a few hours, even in the cold. If you prepare for the week, freeze immediately in flat and dated portions. For small quantities, our guide of the mini meat grinder shows what a small bowl can do.
Why mince your own meat: taste and budget
Mincing yourself changes three things compared to a pre-minced tray:
- freshness: the meat is minced just before cooking, without having time to oxidize or release its water;
- composition: you choose the cut and its fat rate, and nothing else enters the grinder;
- texture: fine plate for melting meatballs, coarse plate for a steak with chew.
On the budget side, compare the price per kilo of a chuck, a shoulder or a top round with that of the ground beef you usually buy: depending on the promotions and the quantities, the gap can play in your favor, especially for a family that consumes a lot. Mincing the ends of pieces also avoids waste. It is finally the simplest way to obtain a halal minced meat whose origin you know, from a piece bought at your butcher.
Cold, cleanly sliced, cooked fast
Mincing your meat holds in three principles: very cold flesh in cubes, a tool that slices instead of crushing, then a cooking or a freezing right after. The knife remains the ritual of tartare and the crank is suitable for weekly use.
If you mince for the whole family or several times a week, a model from our collection of electric meat grinders will save the most time: the motor processes 500 grams in about one minute, with plates for every texture.
